Premio Summer Salad

Premio Summer Salad

  • 1 pkg. Premio Sweet Italian Sausage, cooked as per package
    directions, cooled and diced 1/2 inch
  • 3 medium Potatoes, peeled, diced 1/2 inch, cooked and cooled
  • 3 Granny Smith Apples, unpeeled, diced 1/2 inch
  • 1- 1/2 cups celery, diced 1/4 inch
  • 1-1/2 cups Red Onions, sliced
  • 3/4 cup Olive Oil
  • 3 ounces Lemon Juice
  • 2 ounces Cider Vinegar
  • 1-1/2 tsp. Salt
  • 1 tsp. Black Pepper
  • 1/4 cup Sugar
  • 1/4 cup Fresh parsley, chopped
  • 3/4 cup Walnuts, chopped

Combine all ingredients well and allow to marinate overnight.

Serves 6 to 8
