Premio Summer Salad
- 1 pkg. Premio Sweet Italian Sausage, cooked as per package
directions, cooled and diced 1/2 inch
- 3 medium Potatoes, peeled, diced 1/2 inch, cooked and cooled
- 3 Granny Smith Apples, unpeeled, diced 1/2 inch
- 1- 1/2 cups celery, diced 1/4 inch
- 1-1/2 cups Red Onions, sliced
- 3/4 cup Olive Oil
- 3 ounces Lemon Juice
- 2 ounces Cider Vinegar
- 1-1/2 tsp. Salt
- 1 tsp. Black Pepper
- 1/4 cup Sugar
- 1/4 cup Fresh parsley, chopped
- 3/4 cup Walnuts, chopped
Combine all ingredients well and allow to marinate overnight.
Serves 6 to 8
