    I Cant Get Enough Sausage and Chicken Scarpariello


     

    Ingredients:

    • 3 lbs chicken thighs (with skin deboned) or you can use breast meat cut in bite size pieces
    • 1 pound Premio Italian Sausage sweet or hot
    • 1 medium sized onion - sliced
    • 3-4 cloves garlic - minced
    • 1 cup dry white wine
    • 1/4 c. chicken broth
    • 1 cup water
    • 2 tblsp. butter
    • 4 Green, Red, and Yellow peppers or any pepper you have  - seeded and Julienned
    • 1 inch Sprig of fresh rosemary, cut up fine
    • 1/2 c. Italian parsley half for dish half for decoration
    • The juice of one lemon and the zest
    • Olive oil, salt & pepper

    How to make I Cant Get Enough Sausage and Chicken Scarpariello

    Heat olive oil and water in a large sauté pan. Add your Premio Sweet/Mild Italian Sausage et simmer on low heat until the water is gone and the oils are coating the pan. Turn the sausages until browned. Takes approx. 8-10 minutes. Set aside.
    Add the chicken pieces to the pan add salt & pepper to taste. Turn the chicken over after it has cooked for approx. 8-10 minutes each side. When chicken is golden brown, remove and set aside.

    In the same pan, add your peppers, onion, and garlic in that order as each starts to brown add the next. Raise the heat to medium and add rosemary white wine and chicken broth lemon juice and zest. Cook until the wine is at a boil. Lower the heat to a simmer and has reduced by half and butter and fresh seasonings. Let simmer for approx 5 minutes till sauce coats the back of a spoon. Return the sausage and chicken into pan. Cut sausage it cut into bite size pieces.
     
    This is a very versatile dish. Serve a nice helping of chicken and sausage pieces on each plate with some of the pan sauce, on top and garnish with fresh Italian parsley.
    If desired serve over angel hair pasta or serve on crusty Italian bread.
     Pair with a sturdy Red Italian wine like a Chianti or a Valpolicella
