Zucchini Noodles With Sausage and Tomato Cream Sauce

Ingredients:

1 14-oz. package Premio Sweet Italian Chicken Sausage, removed from casings
4 medium-sized zucchini, pre-cut into noodle spirals
1 1/2 tsp. kosher salt
2 tbsp. olive oil or butter
1 medium Vidalia onion, diced finely
4 tbsp. fresh or jarred garlic, chopped
1 16-oz. can diced tomatoes, drained of liquid
1/2 cup coconut or dairy milk (full flavor or low-fat)
1/2 tsp. fresh oregano, chopped finely (dried version is acceptable)
1/2 tsp. fresh parsley, chopped finely (dried version is acceptable)
1/2 tsp. fresh basil, chopped finely (dried version is acceptable)
1/2 tsp. fresh rosemary, chopped finely (dried version is acceptable)

How to make Zucchini Noodles With Sausage and Tomato Cream Sauce:

1. Place a colander in a bowl that is larger than the colander. Put all zucchini spiral noodles in the colander. Sprinkle 1 tsp. kosher salt over noodles. Let the noodles sit untouched for half an hour.

2. Place 5-8 paper towels on a cutting board or in a large bowl. Remove zucchini noodles from the colander and place on paper towels. Press slightly on the noodles to squeeze water out. Set the noodles and paper towels aside.

3. Preheat olive oil or butter in a medium-sized skillet over low-medium heat for 1 minute.

4. Add Premio Sweet Italian Chicken Sausage to the skillet and cook the sausage over medium-high heat for 4-6 minutes. Use a wooden spoon or plastic spatula to crumble the sausage meat while cooking. Cook until no pink remains and fully browned.

5. Reduce heat to medium. Add onions to the sausage. Cook for about 2 minutes until onions become slightly translucent.

6. Add garlic to the sausage and onion. Cook for another minute.

7. Add diced tomatoes, coconut or dairy milk, oregano, parsley, basil, rosemary and remaining kosher salt to the skillet with the sausage, onions and garlic. Combine all ingredients well. Bring to a boil over medium-high heat.

8. Reduce heat to medium and cook the mixture for 3 minutes. Remove the skillet from heat.

9. Add the zucchini noodles to the sausage mixture in the skillet. Stir in the zucchini noodles with sausage and tomato cream sauce and mix well. Serve immediately.
