Fabada Asturiana

Ingredients:

3 Premio Chorizo Sausage links, sliced 1/2-inch round 4 cans red beans
1 cup diced yellow onion
2 tablespoons minced garlic
1/2 cup diced red bell pepper
1 1/2 cups diced potato
1 teaspoon smoked paprika
1 teaspoon dry oregano
2 tablespoons vegetable oil
1 tablespoon chopped parsley
1 bay leaf
2 tablespoons garlic powder
3 tablespoons tomato paste
3 cups water
1 1/2 tablespoons pepper
Salt, to taste

  • Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
  • Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.

How to make Fabada Asturiana:

1. In large pot on high heat, brown onions, peppers and garlic. Remove from pan and set aside. Add Premio Sausage and cook for 2 minutes. Add tomato paste and stir continuously for 1 minute. Add water to pot and deglaze.

2. Add remaining ingredients to pan and bring to a boil. Cover and let simmer for 1 1/2 hours. Let cool slightly and enjoy.
