Premio Po’ Boy

Ingredients:

Spicy Mustard Sauce:
12 tablespoons Dijon mustard
6 tablespoons mayonnaise
1 teaspoon worcestershire sauce
Tabasco sauce or other hot sauce to taste
Po’ Boy:
1 package Premio Private: Italian Sausage with Pepper, Onion & Mushroom, cut into 1/2-inch slices
8 (6-inch) sections French bread or seeded long rolls
4 tablespoons butter
6 cups cold slaw salad mix
24 thin dill pickle slices
1 red onion, thinly sliced (optional)
2 large tomatoes, sliced thin

  • Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
  • Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.

How to make Premio Po' Boy:

Sauce:

1. Combine the mustard, mayonnaise, brown sugar and Worcestershire sauce in a small bowl. Add tabasco to taste. Set aside.

Po’ Boy:

1. Place Premio Sausage slices in a heavy skillet, heated over medium heat; saute until golden brown and cooked through (about 2-3 minutes per side.) Transfer to paper towels to drain.

2. Butter bread or buns and grill; keep warm in a low oven. Spread toasted bread or buns generously with mustard-mayonnaise sauce on both sides.

3. On one side, heap the shredded cabbage and lay over it the pickle slices, onion and tomato slices. Place 4 sausage slices on top and finish with other half of bread or bun,. Slice in half and enjoy!!
