Root Veggie & Sausage Casserole in a Crockpot

Ingredients:

1 pound Premio Mild Italian Sausage
1 potato, cubed
1 sweet potato, peeled & cut into cubes
2 sliced medium carrots
1 small onion, chopped
1 can chicken broth
1 can diced tomatoes
1/2 teaspoon sugar
1/2 teaspoon thyme
1/4 teaspoon pepper
1/4 cup fresh parsley, chopped

  • Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
  • Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.

How to make Root Veggie & Sausage Casserole in a Crockpot:

1. Add all of the ingredients except the parsley into a crock-pot and mix together before cooking on low for 7-9 hours. You can also cook on high for 4-5 hours.

2. To serve, garnish with fresh parsley
