    Roasted Sausage and Eggplant


     

    Premio’s Cheese and Basil sausage adds a delicious creamy texture to this quick and easy to prepare dish. The eggplant absorbs the sausage and vegetables’ juices, and it is so flavorful without being greasy. It's become a once-a-week standard in our house.

    Ingredients:

    • 1 pound Premio Cheese & Basil Sausage cut into 2" pieces
    • 2 pound eggplant skinned, cut into 1 inch squares, and laid on paper towels till ready to assemble the recipe.
    • 2 large onions cut into quarters
    • 1 large red pepper cored and sliced into 2 inch pieces
    • 2 large cloves of garlic chopped
    • Salt and pepper to taste
    • 1 ts. Parsley
    • 1 ts. Oregano
    • 1/4 cup parmesan cheese
    • 1/2 cup bread crumbs
    • 1 ts. crushed red pepper, optional

    How to make Roasted Sausage and Eggplant:

    Preheat the oven to 350 degrees. Spray the bottom of a 9x13 baking dish with olive oil spray. Cover the bottom of the dish with the eggplant. Place the sausages on top of the eggplant. Combine all remaining ingredients in a bowl and pour on top of the sausages. Spray top layer with olive oil spray. Bake for 20 minutes; stir and bake 20 more minutes.  When sausages are cooked through, run the dish under the broiler for 3-4 minutes to crisp up the cheese and breadcrumbs.

    Yield: serves 4
