    Sweet Sausage, Sweet Stuffed Peppers



    • 8 large peppers
    • 1 lb. ground beef
    • 1 lb sweet Premio Italian sausage patties
    • 4 cups water 3 cups fresh spinach 1 cup of long grain enriched rice
    • * 1 jar spaghetti sauce
    • 1/2 cup fresh parsley
    • 1/2 cup shredded Romano cheese
    • 1/2 cup shredded Cheddar cheese
    • 1/4 cup breadcrumbs
    • 2 shallots
    • 2 cloves garlic
    • 1 small onion
    • 1 tbs dried oregano
    • 1/4 tsp black pepper
    • 1/8 tsp red pepper flake

    How to make Sweet Sausage, Sweet Stuffed Peppers:

    Refrigerate mixture until last 15 minutes of cooking.

    Preheat oven to 375o
    Cut off tops of peppers, and clean out seeds, rinse. Blanche peppers in large pot with 4 cups water for 5 min. Remove peppers and discard half of remaining water. Boil remaining water in same pot and cook 1 cup of rice according to package directions. Remove rice from heat when done.
    Saute? diced shallots, onions and garlic in large pan till golden. Crumble, and add ground beef . Brown, drain, and remove beef to large mixing bowl. In same skillet, crumble and brown Premio Sweet/Mild Italian Patties . Add to beef. Add cooked rice, remaining cheese, parsley, breadcrumbs, 1 Tbs dried oregano, 1/4 tsp black pepper, 1/8 tsp red pepper flakes to beef and sausage. Mix well. Stuff peppers with mixture.
    In shallow 13x9 baking dish, pour in jar of spaghetti sauce. Stand peppers upright in baking dish. Cover with foil and bake at 375o for 30 minutes.
    Remove foil and put remaining breadcrumb/cheese mix on top off each pepper to cover meat mix. Return to oven for 15 minutes. Remove from oven and cool for 10 minutes before serving. Serves 4.
