Annie’s Easy-Peasy Kale and Sausage Soup

Ingredients:

1 package Premio Mild Italian Sausagee, casings removed and crumbled into small bits
1 small bunch kale, washed and chopped finely
1 sweet onion, chopped finely
1 large Russet potato, peel mostly on and chopped finely
1 can kidney beans, rinsed
8 cups chicken broth
1 teaspoon garlic
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes
Salt & black pepper, to taste

  • Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
  • Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.

How to make Annie's Easy-Peasy Kale and Sausage Soup:

1. In a pan, sauté Premio Sausage, onion and seasonings, until sausage is cooked, according to package directions.

2. Once sausage is done and onion is transparent, add all remaining ingredients to pot and bring to a boil. Turn heat to a very low simmer and cook for 2 hours, to blend in flavors.
