Baked Pasta with Cauliflower and Premio Hot Sausage

Ingredients:

1 pound Premio Hot Italian Sausage
2 cups cooked cauliflower florets
2 leeks
1/2 cup grated pecorino cheese
2 cups tomato sauce
1/2 cup white wine
1 pound penne pasta
1 tablespoon olive oil

  • Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
  • Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.

How to make Baked Pasta with Cauliflower and Premio Hot Sausage:

1. Preheat oven to 350 degrees (F). Remove casings from Premio Sausage. In a saute pan, saute until sausage is browned in olive oil; remove sausage.

2. Chop leeks, add to pan and saute until soft and translucent.

3. Return sausage to pan and add cooked cauliflower. Add wine and cook for an additional 1 minute over high heat, to combine flavors. Season with salt and pepper.

4. Meanwhile, cook pasta half way in salted water; drain.

5. In a large ovenproof casserole, combine pasta, tomato sauce, sausage mixture and grated cheese. Place in 350 degree (F) oven and bake, uncovered, for 30 minutes. Remove and serve hot.
