Crumble in the Bronx

Ingredients:

8-10 Premio Mild Italian Sausage links
6 Granny Smith Apples, peeled, cored and diced
8 ounces pepper jack cheese
1 cup butter
2 teaspoon vanilla flavoring
3/4 cup brown sugar, firmly packed
2-4 tablespoons cinnamon
2 tablespoons black pepper
2 tablespoons white pepper
1 1/2 tablespoons powdered thyme
2 tablespoons garlic powder
2 teaspoons salt
Crumble Ingredients:
1 1/2 cups butter, cold and unsalted
1 1/2 cups flour
2/3 cup brown sugar
6 tablespoons white sugar
1 teaspoon salt
Extra: 1/4 cup flour

  • Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.

How to make Crumble in the Bronx:

Sausage:

1. Use a knife or scissors to break open casing on Premio Sausage. Remove meat, put in bowl and discard casing.

2. In a large pot, turn flame on medium and put 1/4 cup of butter into pot; toss around a bit. Once half melted, add sausage meat, one handful at-a-time.

3. Stir meat consistently and pound or press if necessary. Toss until all meat has a golden brown color. Place sausage into separate bowl.

Apples:

1. Peel, core and dice the apples. In the same pot that you cooked sausage in, put on medium flame and add in remaining butter. Toss around butter before adding in diced apples. Let simmer on medium heat, stirring occasionally.

2. Once butter has melted and apples are cooking and becoming juicy, add cinnamon, brown sugar and vanilla; continue to stir. Cook for 10-15 minutes after all flavors have been added.

Mixture:

Keep flame on medium heat. Once apples have achieved brown sugar color, add sausage (you may add all at once or slowly in portions This is dependent on how much you are comfortable stirring at once).

2. Simmer for 10-15 minutes. Add salt, black pepper, white pepper, powdered thyme and garlic powder; mix thoroughly.

3. Turn heat down to low and stir, ocasionally, while you make the crumble topping.

Crumble:
1.
Turn oven to 350 degrees (F). In a large bowl, mix flour, light-brown sugar, granulated sugar and salt. 2. With your hands, work in butter until large, moist clumps form. Chill, covered, until ready to use.

Baking:

Pour sausage and apple mixture into pan. Add the extra 1/4 cup of flour and mix thoroughly. Add in 8 ounces pepper jack cheese, shredded; mix thoroughly.

2. Take your crumble topping and sprinkle it evenly on top of mixture, using all of it.

3. Put in oven and bake for 30-40 minutes. Pull out, let cool for 20 minutes and eat!
