Glorious Sausage Pie

Ingredients:

3-4 Premio Premio’s Sweet Italian Sausage links
6 eggs
1/2 cup ricotta cheese
1/2 package chopped frozen spinach, thawed
1/2 cup parmesean cheese
1/2 chopped onion
1/2 package shredded mozzarella cheese
1 deep-dish pie crust or 2 regular pie crusts

  • Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
  • Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.

How to make Glorious Sausage Pie:

1. Preheat oven to 375 degrees (F). Coat a frying pan with oil. Heat pan and add onions; cook until soft. Remove Premio Sausage from casing, add to pan, break up and cook until browned. Remove excess fat. Add spinach to pan and saute for a few additional minutes. Let mixture cool a little in fridge.

2. While mixture is cooling, add eggs, riccotta, parmesean and mozzarella cheeses to a large bowl. Add salt and pepper to taste; mix well until everything melds together.

3. Once sausage mixture has cooled, add to cheese mixture; mix well. Pour into frozen pie crusts. Bake in preheated oven for 1 hour, making sure to watch for overbrowning of crust. Allow to cool slightly before serving.
