Premio Fire-Side Sausage-Bean Supper

Ingredients:

2.5 pounds Premio Premio’s Sweet Italian Sausage, cut into 2-3 inch pieces
3 pints cherry tomatoes
1 medium-large onion, cut into 1 1/2-inch chunks
4 garlic cloves, sliced
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons balsamic vinegar
2 teaspoons dried thyme leaves
2 whole bay leaves
Salt and pepper
3 Cans (16-ounces each) white beans, drained, with 1/2 cup of liquid from the beans reserved

  • Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
  • Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.

How to make Premio Fire-Side Sausage-Bean Supper:

1. Adjust oven rack to lowest position. Preheat oven to 425 degree (F) 5 minutes before placing casserole in oven.

2. Mix all ingredients except the beans and their reserved liquid in a roasting pan. Place pan in oven and roast until Premio Sausages are browned and tomatoes have reduced to a thick sauce, about 45 minutes.

3. Remove from oven, stir in beans and reserved liquid, and continue cooking until casserole has heated through, about 10 minutes longer. Remove bay leaves and transfer to a large serving bowl.
