Savory Scalloped Potatoes With Crumbled Sausage

Ingredients:

1 16 oz. package Premio Fresh Chorizo (or preferred Premio fresh sausage variety)
9 medium-size white potatoes, sliced generously
1 red bell pepper, diced
1 yellow bell pepper, diced
1 white or yellow onion, chopped
2 cups fresh cheddar cheese, shredded
1 cup whole or low-fat milk
1 cup whole or low-fat sour cream
1/2 stick unsalted butter
1 teaspoon salt
1 teaspoon ground black pepper
2 garlic cloves, minced
2 tablespoons white, unbleached flour (any brand)
2 tablespoons ground, smoked paprika

How to make Savory Scalloped Potatoes With Crumbled Sausage:

1. Remove Premio Fresh Chorizo from original packaging and place the links on a plate. Put the plate in the freezer to firm the sausage for 15 minutes.

2. Remove the sausage from the freezer and transfer it to a plastic or wooden cutting board. Slice 1/2-inch medallions or coins of Premio Fresh Chorizo using a sharp knife. Place the sliced sausage into a large mixing bowl.

3. Add sliced potatoes, red bell pepper, yellow bell pepper and onion to the sausage medallions in the mixing bowl. Stir to mix the ingredients.

4. Prepare a large baking dish by spraying with cooking spray. Add the Premio Fresh Chorizo and potato mixture to a baking dish, distributing ingredients evenly. Top the mixture with one cup of fresh cheddar cheese. Set the baking dish aside.

5. Preheat the oven to 375 degrees Fahrenheit.

6. Whisk together the milk, sour cream, butter, seasonings, garlic and flour in a medium-size saucepan on low heat. Stir constantly to ensure the mixture combines — the mixture should not boil. Once finished, the mixture will be smooth and thick.

7. Pour the thickened cheese and milk sauce mixture over the chorizo, potatoes and vegetables. Distribute the remaining shredded cheddar cheese on top and sprinkle with paprika.

8. Cover the savory scalloped potatoes with sausage with heavy-duty aluminum foil. Put the covered baking dish in the oven for 40 minutes. Remove foil, then bake for 15 more minutes. Serve immediately while hot.
