Taco Meatloaf


1 package Premio Sausage (choose your favorite), casings removed
1 pound lean ground beef
1 pound ground lamb
1 package Mexican-flavored rice mix
1 cup sour cream
1 package Mexican blend shredded cheese
2 eggs
1/2 cup smooth salsa
1 medium onion, finely diced
1/2 green pepper, finely diced
1 jalapeno pepper, seeds removed and finely diced
1 small bunch cilantro, chopped
6 slices pepper jack cheese Salt & pepper, to taste

  • Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
  • Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.

How to make Taco Meatloaf:

1. In a large mixing bowl, place rice mix, salsa, eggs and sour cream. Let stand while preparing other ingredients.

2. Add remaining ingredients into mixing bowl except for slices of pepper jack cheese; blend well.

3. Place meat mixture into 2 loaf pans and bake at 350 degrees (F) for 1 hour and 25 minutes.

4. Place slices of pepper jack cheese on top of the loaves and continue baking for an additional 25 minutes, or until cheese has melted. Remove and serve warmed with tortillas, salsa, and guacamole, if desired.
