1 pound Premio Premio’s Sweet Italian Sausage
1/2 onion, chopped
6 cups beef broth (or bouillion)
16 ounces tomato sauce
2 cans chopped stewed tomato with basil & oregano
1 cup carrots, cut in half circles
1/2 teaspoon dried basil
1/2 teaspoon oregano
1 small zucchini, thinly sliced in half circles
8 ounces cheese filled tortellini
1 tablespoon parsley
Pressed, fresh garlic to taste
Grated fresh Parmesan Cheese for garnish

  • Always cook pork sausage to a minimum internal temperature of 160° F using a meat thermometer.
  • Always cook chicken sausage to a minimum internal temperature of 165° F using a meat thermometer.

How to make Tortellini Soup:

1. Boil Premio Sausages until cooked all the way through. Remove and slice in half circles; fry slightly with onions and garlic. Drain grease, if any.

2. Add all of the other ingredients except tortellini, zucchini and parmesan cheese. Cook until the carrots are somewhat tender. Add zucchini and tortellini, and cook until zucchini is tender. Serve with parmesan cheese sprinkled on top.
