With a delicious winter vegetable base, protein-packed eggs and a sweet hint of sausage, this casserole is perfect for breakfast or a light lunch. Here’s how to prepare yours:

  • 1 package Premio Sweet Italian Turkey Sausage
  • 2 cups butternut squash
  • 1/2 Vidalia onion, diced
  • 2 tsp olive oil
  • 4 eggs
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 4 cups chopped spinach

Preheat oven to 400 degrees. In a medium skillet, saute your sausage until browned, breaking it up into crumbles. Set aside and cook butternut squash and onions in the skillet for 8-10 minutes or until tender, stirring in salt, pepper, oregano and garlic powder. Finally, add spinach and cook for 1/2 minutes until wilted. Whisk eggs, add the butternut squash and sausage mixture and transfer to a baking dish. Cook for 25-30 minutes until solid and enjoy!

  • 1 package Sweet Italian Turkey Sausage
  • 12 oz. penne pasta
  • 3 tbsp olive oil
  • 3 heads of broccoli
  • 2 chopped garlic cloves
  • 12 oz. cherry tomatoes
  • 2 cups corn
  • 1/2 Vidalia onion, chopped
  • Parmesan cheese

Bring a large pot of water to a boil and cook the penne pasta according to package directions until al dente, then drain and set aside. Saute sausage in olive oil in a large skillet, breaking up into small crumbles and cooking until browned. While the sausage cooks for about 10 minutes, halve your cherry tomatoes and cut your broccoli into smaller pieces, keeping only the florets.

Once your sausage is browned, add your onions, broccoli and garlic, stirring, covering and reducing heat to cook for 5 minutes until tender. Next, add tomatoes and corn, and cook covered for 2 minutes. Finally, stir in the pasta, 1/2 cup water, salt and more olive oil, mixing well and cooking over low heat for a few more minutes. Serve sprinkled with Parmesan for a guilt-free treat.
