Chicken Sausage and Shrimp Taco Bowls

Want a healthier way to enjoy the taste of tacos with just as much flavor? Try this delicious, fresh taco bowl.

Ingredients:

  • 1/2 package Premio Sweet Italian Chicken Sausage
  • 1 pound shrimp, fresh and raw
  • 1 can black beans, rinsed and drained
  • 2 heads Romaine lettuce, rinsed and chopped
  • 1/2 red onion, chopped
  • 1 large diced tomato
  • 2 cups Mexican blend cheese
  • 3 tbsp chopped cilantro
  • 1 lime, quartered
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 2 1/2 tsp chili powder
  • 1 tbsp olive oil
  • Tortilla chips
  • 1/4 cup sour cream (optional)

Preheat your grill. Combine cumin, olive oil, salt and 1/2 tsp chili powder in a bowl, then set aside. Remove sausage meat from casings and set aside, then de-vein and de-shell the shrimp. Toss shrimp in the bowl with your olive oil mixture, coating completely.

Meanwhile, cook your sausage meat in a grill pan until browned and firm, breaking into small pieces and draining off some fat. Add shrimp to the pan and cook until pink and firm for about 5 minutes. Next, fill four serving bowls with equal portions of lettuce, black beans, tomato, cheese and red onion, adding a serving of shrimp and sausage and finishing off with squeezed lime juice, cilantro and crumbled tortilla chips. Top with sour cream if you like.

Ingredients:

  • 1 package Premio Chorizo Sausage, casings removed
  • 1 lb. ground lamb
  • 1 lb. ground beef
  • 1 package Mexican rice mix
  • 1 package Mexican blend shredded cheese
  • 2 eggs
  • 1 cup sour cream
  • 1 cup smooth salsa
  • 1/2 diced green pepper
  • 1/2 diced medium onion
  • 1 diced Jalapeno pepper, seeds removed
  • 1 bunch chopped cilantro
  • 6 slices pepper jack cheese
  • Salt and pepper to taste

In a large mixing bowl, combine salsa, sour cream, eggs and rice mix. Add lamb, beef and sausage meat, shredded cheese, salsa, peppers, onion and cilantro, and mix well. Transfer to two loaf pans and bake at 350 degrees (F) for one hour and 25 minutes, then place pepper jack slices atop the loaves and bake for an additional 25 minutes. Serve warm with salsa, tortilla chips and guacamole for a taco-y twist.

Ingredients:

  • 1/2 package Premio Sweet Italian Sausage Meat
  • 2 medium diced tomatoes
  • 1 cup cheddar cheese
  • 1 cup Monterey Jack cheese
  • 1 cup black olives
  • Tortilla chips
  • Refried Beans Ingredients:
  • 1 can pinto or black beans, 15 oz.
  • 2 minced garlic cloves
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 packet taco seasoning
  • 1/2 lime
  • Salt
  • Pepper
  • Guacamole Ingredients:
  • 2 avocados
  • 1/2 lime
  • 1/4 cup diced red onion
  • 1 minced serrano chile
  • 1/2 tsp salt
  • 2 1/2 tbsp minced cilantro
  • 1/2 tomato with insides removed

Start with your guacamole by scooping out and mashing the avocado flesh, mixing it with the rest of your guacamole ingredients, covering and refrigerating. Next, cook your sausage meat in a skillet over medium-high heat until browned, drain and set aside. For your refried beans, begin by cooking your garlic over medium heat until browned, then add beans and seasonings and mash. Build your dip from the bottom up with refried beans, sour cream, tomatoes, sausage meat, guacamole, black olives and cheese. Dig in with tortilla chips.
