Sausage and Avocado Toast

Use 8 ounces of your favorite sausage to make this simple and filling breakfast. You’ll get four pieces of toast, perfect for two people.

Cook your sausage in a skillet over medium heat, ensuring it reaches a minimum internal temperature of 160 degrees Fahrenheit for pork sausage or 165 degrees F for chicken sausage. Break the sausage into small pieces as it cooks, or slice it up once it’s done cooking.

Toast four slices of bread — we recommend multigrain or pumpernickel — and drizzle them with olive oil after removing them from the toaster. Cut 1 garlic clove in half, and rub the cut part on each piece of bread.

Cut an avocado into quarters and mash one piece on each slice of bread. Squeeze some lime juice on each, and sprinkle with salt, pepper and cilantro. Top with your sausage and a spoonful of crumbled queso fresco and salsa. You’ll feel powered up for your day!

Cornbread Stuffing Muffins With Sausage

Do you prefer a baked good for breakfast? How about a baked cornbread stuffing muffin with sausage for a bite-size and delicious breakfast? This recipe serves between four and six people, so you can share — or keep them for yourself and reheat them throughout the week.

Cook 1 package of mild Italian sausage and chop them into small pieces. Preheat your oven to 375 degrees F, and prepare your cornbread muffin mix according to the package instructions. Spray your muffin pan with nonstick cooking spray before placing a cupcake liner in each slot. Spoon your cornbread batter into each holder so that each is half-full.

For your muffin stuffing, use a large bowl to mix the cooked sausage, ⅓ cup diced celery, ⅓ cup diced and sauteed onions, ⅓ cup cranberries, and 4 tablespoons of chopped red or green onion. Spoon 1 tablespoon into the middle of your batter in the cupcake liner, ensuring each muffin has equal filling.

Bake muffins for 20 minutes or according to the package directions. Garnish your muffins with green onions and serve while warm.

Chop 2 medium Vidalia onions, 2 orange bell peppers and 1 bunch green onions. Place the veggies in a large mixing bowl with 4 tablespoons olive oil, 1 teaspoon sea salt, 1 tsp ground pepper, and ¼ cup lemon or lime juice. Toss to combine all of the ingredients.

Line a grill-safe baking sheet with aluminum foil, and place your veggie mixture on top in a single layer. Grill the veggies for about 5 minutes, removing the scallions if they’re cooking faster than the other ingredients. Let all the veggies cool in a large bowl while you prepare your sausage.

Unpackage your kielbasa, place it on a plate and let it chill in the freezer for 20 minutes. Transfer the meat to a cutting board and cut the links lengthwise. Grill the sausage for about 5-7 minutes or until they reach an internal temperature of 160 degrees F. Rotate the pieces once to ensure evenness.

Lightly brown and warm your tortillas on the grill. Spoon your vegetable filling and kielbasa into your tacos and top with extra garnish. You’ll get eight tacos!

Grill various types of sausage until they reach an internal temperature of 160 degrees F for pork or 165 degrees F for chicken. Once cooked, cover your sausages with foil to keep them warm while you assemble the rest of the charcuterie board.

Pour sauces like Dijon mustard, BBQ and tahini into small dishes. Arrange your favorite veggies on the board — we like carrot sticks, pickles, bell peppers, olives, cucumbers, sauerkraut and celery sticks. Add a few types of cheese and your sausage once it’s cooled and cut into slices. Place your board on a table for everyone to enjoy.
